Chef Alain Pignard

Born in Lyon, France, Alain Pignard has brought his art to perfection in the greatest kitchens around the world. Among these are: the Hôtel des Ambassadeurs in Paris, the well-known Dorchester Hotel in London where he worked under the supervision of the highly recognized Chef Anton Mossiman, as well as the Cavalieri Hilton Hotel in Rome, where he practiced his talent as sauce cook in the internationally renowned La Pergola restaurant. In 1999, he became Executive Chef and supervised the work of nearly 90 cooks at the Fairmont Queen Elizabeth hotel in Montreal, which includes three restaurants (Le Montréalais, Les Voyageurs and the Beaver Club), 33 event rooms, a kosher kitchen and a catering service. This has lead Chef Pignard to supervise the service and preparation of more than 110,000 gourmet meals each year.

After being the Executive Chef of this prestigious 5-star hotel, for 26 years, Alain Pignard co-founds La Palette Gourmande in Montreal, with the partnership of a business woman: Liliana de Kerorguen (MBA HEC-McGill). Through this new venture, he proposes a new affordable gourmet creation that fusions the European and North American traditions.

With a remarkably discreet and humble personality, an extraordinary culinary talent, a proven enthusiasm for hard work and the recognition as Chef of the Year in 2005 by the Society of Chefs, Cooks and Bakers of Quebec, Alain Pignard is a prominent figure of the gastronomy landscape in Quebec. Trained in classical techniques and inspired by discoveries made during multiple trips and unforgettable visits to the kitchens of the most renowned chefs, Chef Pignard unleashes his never-ending imagination to offer his guests innovative creations that leverage the best local products and respect the environment.       

Chef Pignard has had the privilege to host and/or share his kitchen with the greatest names in international gastronomy: the renowned French chefs Paul Bocuse, Alain Ducasse, Georges Blanc, Alain Passard, Émile Jung, Thierry Marx, Philippe Etchebest, Gérald Garcia, Gaël Orieux, Michel Portos, Stéphane Raimbault, the well-known Italian chef Gualtiero Marchesi, New-York’s Shea Gallante, Christian Bravo from Peru and Federico Ziegler from Argentina, Etta van Deveter from South Africa, Joachim Koerper and Luis Pato, both figures of Portuguese gastronomy. In 2011, Anne Desjardins, Chef Relais et Châteaux of Quebec was his guest of honor. In 2012, he received Jean-Pierre Bruneau from the eponym restaurant in Brusselles and in 2013, Dario Gualtieri from casa Umare in Argentina.

Alain Pignard has a solid experience in large-scale catering events. He was the chef of the largest and most prestigious ball in Montreal, the Bal de la Jonquille. He was also one of the chefs at the Montréal en Lumière festival, as well as catering chef for the Montreal Symphonic Orchestra and the Canadian Center for Architecture, chef for the Grand Prix serving nearly 30,000 VIP meals during the Formula 1 weekend, to highlight just a few events among many. In September 2014, the Montreal Museum of Fine Arts has selected La Palette Gourmande as the catering services provider for their exhibition ‘From Van Gogh to Kandinsky, from impressionism to expressionism, 1900-1914’.

La Palette Gourmande offers a refined gourmet experience with meals and products ready to enjoy or ready to cook, that can be enjoyed in our store, at home or at work. Its exclusive collection of gourmet dishes leverages high-end natural products from local producers.  Examples of this refined selection are the wild salmon from the Atlantic, the Quebec lobster in season, the foie gras and the duck from Lac de Brome, the lamb from Kamouraska, the Wagyu beef from Québec, as well as the fresh products from a producer in the region of Charlevoix. Dishes are always prepared with tasty seasonings that leverage the products of the season. Vegetarian creations, delicacies and enticing desserts are also on the menu.
